Breakfast Recipes - Breakfast Waffles

Delicious homemade waffles to surprise your sweetie with. Try the recipe for Chocolate Syrup (see below) for an unexpected topping.

Ingredients
1 cup all-purpose flour
1 1/2 tsp baking powder
1/2 tsp salt
2 tbl sugar
2 egg yolks
2 egg whites
1/2 cup + 2 tbl milk

1/4 cup vegetable oil
1 tsp vanilla extract

Directions
In the large mixing bowl, combine the flour, baking powder, salt and sugar. In the center of the dry ingredients, make a well, or hole. In a smaller mixing bowl, combine the egg yolks, milk and oil. Pour this mixture into the hole in the dry ingredients. Stir just until these dry ingredients are moistened.

Place the egg whites into a small mixing bowl. You can use the small bowl you used for the egg yolk, but wash and dry it thoroughly first.

Preheat your waffle iron. Beat the egg whites until stiff using a hand mixer or a stand mixer. Fold egg whites into the batter.

Pour the batter into your waffle iron, filling the all areas of the hot plate. Close the lid and keep closed until the "Ready" light comes on. If your waffle iron does not have a "ready" light, lift the lid and check the waffle after about one minute. You are looking for a light golden brown color.

Keep waffles warm either in a oven set on the lowest heat or in the microwave.

Serve your homemade waffles with confectioner's sugar, maple syrup or corn syrup and fresh fruit on the side. For a decadent treat, try this super rich chocolate syrup:

1 cup boilng water
1/2 cup white sugar
1 tbl cornstarch
1/4 cup unsweetened cocoa powder
1/2 tsp salt
1 tsp vanilla extract
1 tbl butter

Combine boiling water with sugar, cornstarch, cocoa powder and salt and cook over medium heat, stirring constantly. When mixture comes to a boil, remove from heat and add vanilla and butter. Stir until smooth. Allow to cool slightly before serving.
