Breakfast Recipes - Sage Sausage Breakfast Casserole

This savory breakfast dish is one of our family's favorites and the delicious aroma has awakened us on many holiday mornings. Fix it the night before and just pop it in the oven in the morning and let it bake while you run back to bed and catch a few more Z's.

Ingredients
6 oz sage flavored ground pork sausage
1/4 tsp dry mustard
1/4 tsp salt
1/4 tsp pepper
3 eggs
3/4 cup milk
1/4 cup green onions, minced
2 1/2 slices sourdough bread , toasted and cut into cubes
1/3 cup shredded cheddar cheese
vegetable spray

Medium Skillet
Mixing Bowl
8x8 Baking Pan
Aluminum Foil


Directions
Prepare a 8x8 baking pan by spraying with vegetable spray. In a medium skillet, saute the sausage until browned.  Remove from pan and drain any fat.

Place the eggs into a medium mixing bowl and beat slightly. Add the dry mustard, salt, pepper and milk and mix well. Stir in the cooked sausage, bread and cheddar cheese. Pour into the prepared pan, cover with aluminum foil and refrigerate overnight.

In the morning, preheat your oven to 400 degrees. Bake the mixture for 45 minutes, check to see if the eggs are set. Remove the foil and cook for about 10 more minutes, until the top gets slightly browned.
