Breakfast Recipes - Chocolate Chip Pancakes

Delicious homemade waffles to surprise your sweetie with. Try the recipe for Chocolate Syrup (see below) for an unexpected topping.

Ingredients
3/4 cup all-purpose flour
1 3/4 tsp baking powder
1/2 tsp salt
1 1/2 tsp white sugar
1 small egg
1/2 cup + 2 tbl milk

1 1/2 tbl melted butter
1 tsp vanilla extract
1/2 cup of chocolate chips

Directions
In the large mixing bowl, combine the flour, baking powder, salt and sugar. In the center of the dry ingredients, make a well, or hole. In a smaller mixing bowl, combine the egg, milk, melted butter and vanilla. Pour this mixture into the hole in the dry ingredients. Mix until smooth.

Spray your skillet with vegetable cooking oil spray. Heat it over medium high heat. Pour or scoop pancake batter into the skillet. Sprinkle chocolate chips on top of each pancake.

When you can see bubbles beginning to form on top of the batter, it will be close to the time to flip your pancakes over. Use your spatula to lift the pancake and turn it over. Cook for another minute or two until that side is also brown.

Keep finished pancakes warm either in a oven set on the lowest heat or in the microwave.

Serve with:
Serve your pancakes with confectioner's sugar, maple syrup or corn syrup and fresh fruit on the side.
