Main Dish Recipes - Chicken With Lemons

This chicken entree has a wonderfully complex lemon flavor and goes nicely with garlic mashed potatoes.

Ingredients
2 boneless, skinless chicken breasts
1/4 tsp salt
1 cup flour
2 tbl olive oil
1/4 cup white wine
4 lemons

1/2 stick of unsalted butter, softened
2 tbl drained capers

Directions
Cut three lemons in half and juice, straining to remove seeds. Cut the last lemon into quarters and reserve for serving. Combine salt and flour in the mixing bowl. Dredge chicken breasts in the flour mixture.

In a nonstick skillet, heat olive oil. Place the chicken in the skillet. When the chicken is golden brown, turn over and brown the other side. Brown both sides throughly to make sure the chicken is completely cooked through.

When both sides are browned, add the white wine and lemon juice. Cook for about three minutes, watching the liquid which should reduce in half. When the liquid has reduced, remove the chicken breasts from the pan and remove the pan from heat.

To make the sauce, use a spatula to work the butter into the wine sauce in the pan. Place the chicken breasts on the plates and pour the sauce over the chicken. Garnish with capers and lemon wedges.
