Dessert Recipes - Sinfully Rich Chocolate Fudge

Falling in love with this fudge will happen after you take the first bite. It's a rich chocolately fudge that isn't overly sweet. You won't be able to stop at just one piece!

Ingredients
cooking spray
1 small (7 oz) jar of marshmallow creme

1 1/2 cups white sugar
2/3 cup evaporated milk
3 tsp butter
1/4 tsp salt
1 cup Ghiradelli chocolate chocolate chips
2 cups semisweet chocolate chips
1 tsp vanilla extract
1 cup chopped walnuts

Equipment You'll Need
8x8 pan
Alumninum foil
Large saucepan
Wooden or plastic spoon
Candy thermometer (helpful but optional)


Directions
Prepare your pan by lining it with alumninum foil. Spray the foil with cooking spray. Measure out all ingredients and have them ready to pour into the saucepan.

Choose a large saucepan because the volume of this mixture will increase as it boils. A large saucepan will help prevent anything from boiling over the pot and onto the stove.

In the saucepan, combine the marshmallow creme, sugar, evaporated milk, butter and salt and turn on the heat to medium low. Continue to cook over medium low heat, stirring constantly. Bring to a gentle boil, where bubbles form on both the sides and in the center of the mixture and boil for 6 1/2 additional minutes. Stir constantly during boiling. If using the candy thermometer, you want the mixture to reach 234 degrees on the candy thermometer, also called the soft ball stage.

Remove the pan from heat and mix in the chips, stirring until the chocolate is melted and the mixture is smooth. Stir in the vanilla and chopped nuts. Pour into the prepared pan and refrigerate until firm, about 2 hours. Remove from the refrigerator and cut into squares. Store in an air-tight container.
