You will be amazed how quickly this no-bake cheesecake comes together. It's perfect to make the day ahead of your special night.

Ingredients
2 (8 oz) packages cream cheese, softened
1 (8 oz) container whipped topping, thawed
1/2 cup white sugar
1 tbl vanilla extract
1 prepared graham cracker crust
1 cup strawberries, halved
strawberry glaze (optional)

Directions
The whipped topping (like Cool Whip) will be frozen when you bring it home from the market. Put it in your refrigerator for at least 3 hours to thaw. Using your mixer, blend the cream cheese, vanilla and sugar until smooth. Fold in the whipped topping, using the rubber spatula. Gently incorporate the topping into the cream cheese mixture.

Spoon the mixture into the graham cracker crust. Refrigerate four hours or overnight. Before serving, arrange strawberries decoratively on top of the cheesecake. Spoon strawberry glaze (found in the produce section) on individual dessert plates and place cheesecake slice on top. Garnish with strawberries and mint.

Making your own graham cracker crust is easy with this simple recipe. You'll need the following things:
1 1/2 cups crushed graham crackers (sold in the baking section or crush your own)
1/3 cup white sugar
6 tbl butter, melted

Preheat your oven to 350 degrees F. Mix the cracker crumbs, sugar and butter. Press into an 8 or 9 inch pie plate. Bake for 8 to 10 minutes, until lightly browned. Cool and use in your favorite recipes.
